The Perfect Crab Sandwich: Mitch Tonks
Spread some mayonnaise onto a piece of good brown bread, place some brown crabmeat on top, then add a layer of chunky white crabmeat, some sliced fresh cucumber and a sprinkling of cayenne pepper, a squeeze of lemon juice and sandwich between the other slice of bread. Fantastic!
Mayonnaise: Mitch Tonks
Put 2 egg yolks, 1tbsp Dijon mustard and 25ml white wine vinegar into a bowl. Whisk together and then very slowly pour 350ml vegetable oil, in a steady stream while continuing to whisk, until you have a thick creamy consistency. Lastly whisk in 50ml olive oil then add a squeeze of lemon juice and a pinch of salt and serve with the crab.
