The South Devon tourism offices do not hold specific regional and local visitor trends data, however there are many useful websites to find tourism statistics for the South West region. Here are a few:

There is a region-wide monthly survey organised by South West Tourism which aims to report on current business levels, trends and predictions for the months ahead. These surveys are free to participate in and are open to any tourism related business in the South West.
